Bartender Knowledge Exchange

New for London Cocktail Week 2023, The Bartender Knowledge Exchange is a specially curated programme of hands-on, in venue learning experiences for those working in hospitality.

London Cocktail Week is a celebration of London's world-leading cocktail culture - and we are so proud this year to showcase the talent and skill of the people and teams that work behind some of the greatest bars in the world.

Designed to offer unrivalled access pre-or-during shift - these collection of peer-to-peer learning opportunities have been specially-created for those who want to learn from some of the best. 

These experiences are incredibly limited - some with just a handful of tickets available.
If you're keen - make sure you book them quickly. 

Sexy Fish - A Once In A Lifetime Opportunity

A once in a lifetime opportunity for a bar outside of the UK - Sexy Fish are on the search for a worthy winner to take over their bar for one night during London Cocktail Week.
To enter - bar teams from around the world must submit a FORM and upload a 1 minute video to Instagram tagging @sexyfishlondon explaining why your bar should be chosen. From a shortlist of four - one will be chosen to fly into London and given the accolade of taking over the award-winning bar on Monday 16th October.

This opportunity is ONLY open to bars who have never done a takeover in London before.

Three Sheets - Category Leading Cocktails on a Neighbourhood Bar Budget 

A true look behind the scenes with the team from Three Sheets as they showcase how they create the drinks at their award-winning bar. Without the space for ‘fancy equipment’ - the team will generously share their tips, tricks and techniques of creating their signature drinks and deep dive into the thought processes that inspire their category leading cocktails.

The session will be held at Three Sheets and last for two hours.

Eve Bar - The 'Why Waste?' Evolution

A creative session with Josh Linfitt - Bar Director for Adam Handling Group, showcasing how the team work with the kitchens in their venues to reduce waste. The session will begin in the kitchen of Michelin-starred Frog by Adam Handling, utilising the waste products that the kitchen can't use on their main menu or in their snacks. That “waste” will be then brought down to the Eve Bar lab, using their impressive equipment (rotary evaporator, ultrasonic homogeniser, centrifuge, water bath, dehydrator, vacuum sealer, liquid nitrogen) to create an ingredient which can be transformed into a cocktail and enjoyed at the bar. 

This is a not-to-be missed opportunity to go behind the scenes of this Michelin-starred venue and gain invaluable knowledge to optimise your own sustainable operations.

The Connaught Bar - Behind the Scenes

A special opportunity for a lucky selection of bartenders to spend time with the multi-award winning team at the iconic Connaught Bar (which recently celebrated its 15th birthday) and step behind the scenes as the team share the elements and rituals as they get ready for service. From the back bar preparations to the mise en place before doors open - this is a one-off chance to see how the operations behind one of the greatest bars in the world really works.


Thursday 12th October, 2pm-3.30pm - The Connaught Bar
Plus a cocktail offered by The Connaught Bar team at 4pm
Tickets will be drawn at random

The Aubrey at Mandarin Oriental - Omakase Mise en Place

Join The Aubrey’s Bar Director Pietro Rizzo - as he sets up their much-lauded Omakase Experience ready for that evening’s session. As he prepares, Pietro will give you the inside track on how they run their Omakase Experience, including the aromatisation of the room and the preparation of the ice and ingredients. This is a limited opportunity for just three people per session, and a chance to gain some knowledge for bringing elements of Omakase - or even the full experience - to your own service.

Swift Bar Borough and Swift Bar Shoreditch - Pick Your Battles 

Learn the basics of hand cracking ice to order. A one-on-one opportunity to learn from the Swift team, who will go through highballs, rocks, cracked (think highballs but larger for higher capacity glasses like wine/goblets), wash lines, garnishing with hand cracked ice and how to avoid your hand ending up looking like a sieve! This is a hands-on activation where you will have a go yourself!

Swift Bar Borough - Bartender’s Choice 

A senior member of the Swift bar team will guide each guest through a tasting of their favourite drams of the moment. These will include independent bottlings, limited releases and just anything they are really enjoying at that time. 

Thursday 12th - Sunday 22nd October, 4.30pm - Swift Borough
£25 per ticket (value of tasting is in excess of £40).

Hacha Dalston - Explore the agave flavour wheel with Deano Moncrieffe

Join Deano Moncrieffe, co-founder of Hacha Agaveria's and global agave spirits expert to deep-dive into the DNA of the agave plant and the flavours within.

Deano will pull upon his unrivalled knowledge and collection of agave spirits to explain where the various flavours come from, taking you on a fascinating journey of discovery all while sipping on some of his Agave List favourites.

What flavours come naturally from the plant and how? Learn which come from the distillation process, during fermentation, or from aging. He has combined all of this knowledge to create a ground breaking agave flavour wheel, enabling bartenders a greater undertanding of what ingredients to use to enhance the flavours that naturally exist within the agave plant, giving you the perfect tools to make amazing agave cocktails.
